Taru Vegan Cafe
The word Taru means plant in Sanskrit language and Vegan is another word for Sattvic food in yogic tradition which means all that one intakes in one’s psychosomatic embodiment must be supportive to the spiritual journey. Our plant-based restaurant is called ‘Taru Vegan Cafe’. It is the hang out lounge for the Yogis and Tantrics of the world traveling and living at our Yoga Ashram in Goa, India.
Our invitation to yogic lifestyle is spreading towards all people who are searching for eating clean and whole diet as they are passionate about embracing the vegan way to compassionate living and respect for all sentient beings Eating whole, clean and healthy can mean different for different people at different context. Karuna, compassion being the foundation for all spiritual journey is minimum decency code for Yoga practitioners. Hence, they are naturally bound to be drawn to eating the food as it is found in nature and causes minimum possible damage to environment. That is, food should be fresh, organic and treated with love and respect for environmental wellness. Veganism is no more a fad but it has found its place in mainstream due to its impact on weight loss and metabolic health.
‘Vocal for Local’ in Goa, India as Veggies heaven
India has been a heaven for vegetarian people for centuries as it produces the most incredible and nutritious vegetables, fruits, nuts and other plant-based varieties of food in the villages. We invite our students to visit the organic spice, vegetables and fruit farms in south Goa which are very close to famous Netravali Waterfall. Organic and vegan markets are regularly organized by local politicians and farmers. They are highlights of our weekend trips during Yoga Teacher Training Courses, Yoga Retreats and Work as Yoga-Meditation Ashram Life Experience Programs.
The state of Goa always played a lead role in organic and vegan India due to its fertile land and awareness of local people who are dedicated to their home-grown vegetables.
Amla, gooseberry, Kthal, Jackfruit, Bathua, a leafy vegetable, Palak, green spinach, Tindora, ivy ground, Narial, coconut, Aam, mangoes, Papita, papaya, Amrud, Guvava and different kinds of fresh food are part of everyday food preparation in local Goa homes.
Returning to the roots
Our chef and team members are constantly enhancing their awareness about the impact of conscious eating and vegan lifestyle on their yoga practices and well being. Some of our chefs are also Yoga Teachers and practitioners. Our vegan lounge is a hot discussion ground for vegan lifestyle, musical concerts, ecstatic dances, bone-fire ceremonies and other celebrations. It does not take much for our Vegan chefs to prepare incredibly creative menu for Taru Vegan Café as Indian meals and cooking methods are traditionally vegetarian. We just needed to remove milk products and honey from our cuisine and we developed amazing variety of vegan and nutritious diet for our participants. All we needed to do was to rediscover the traditional culinary roots in different parts of India. We found out that refined sugar, refined oil and refined grains were not part of our culture. Whole plant, whole fruits and whole nuts were inherent part of Indian eating habits. We started returning to our roots by moving towards the traditional food system and its inbuilt wisdom of the sages for building connection with local farmers and getting their products into our kitchen directly. So that, we know the source and experience the quality of food received in our kitchen. The roots of Indian food traditions helps us create fresher, delicious and nutritious food options
As vegan diet refrains from all animal products such as dairy products, eggs, fish and meat for saving earth, its echo system and environment.
Soya products and soya chops has always been used in India for time immemorial as Mock-meat or plant-based meat. Its popularity is growing globally as it is healthy and environment friendly.
